Light and airy because the yare made from crustless bread, panko bread crumbs stay flakier and produce a thicker, crispier crust than frying with regular bread crumbs. Foods stay crunchier longer since the flakes don't absorb as much oil.
Dredge chicken, seafood, cutlets or vegetables in flour. Shake off excess. Dip in mixture of 2 eggs beaten together with 1-2 tablespoons of water. Roll in bread crumbs. Bake in oven or fry in oil or butter.
